Well lets see where to start this.
I have been overweight for some time and I am under no illusion that it just happened :). I know I ate my way in to my weight that I currently am without having any type of exercise in my life. I have gone through ups and downs like most people and I hit a pretty low in my life a few years back. I was in and out of the hospital over the course of the last 3 years with stomach related issues. I have had every test imaginable ran on me and a gallbladder sacrifice later I finally was given the diagnosis of SOD dysfunction (sphincter of Oddi). For those of you unfamiliar with SOD dysfunction it triggers pancreatic attacks (pancreatitis) that cause severe pain and can last anywhere from 3 days to weeks. In my case they have only ever lasted 1-1.5 weeks long which consists of going on a clear liquid diet and pain killers.
I have not been presented with many options on dealing with this except to have surgery (ERCP with sphincterotomy), to me that was not really a solution because it carried too high of a risk for me to develop major side effects. After having 3 more attacks that came on in a series of 2 months I decided that it was time for a change. I have done tons of reading and research and have decided that a Paleo diet is what will be best for me. I am going to take my body back to basics and I plan on documenting this on here. Everything from my challenges I have daily to food and recipes that I am eating and cooking.
